STOP ONE
SINGAPORE

Haji Lane is a narrow pedestrian street in the Kampong Glam district that has been re-energized into a colourful corridor of independent retail. Unlike the vast malls that dominate much of Singapore’s commercial landscape, this is where micro-merchants, indie fashion labels, specialist cafés, and vintage shops operate side by side. A mix of local shoppers and international visitors fuels its humming energy.

The Host

Tan Siuli is one of Singapore’s most respected contemporary art curators, with over a decade shaping culture in the region, including two editions of the Singapore Biennale. She has spoken at institutions such as Frieze Academy in London and Bloomberg’s Brilliant Ideas, where she contextualizes cultural and economic forces shaping the Asia-Pacific region.

The Experience

Siuli’s tour transforms Haji Lane into a study of Singapore’s independent economy, revealing how creative entrepreneurs build identity beyond shopping mall culture, and how art and fashion translate into commerce.

The Dinner

Nouri is a Michelin-starred restaurant led by Chef Ivan Brehm, known for his boundary-pushing approach to modern cuisine. Nouri constructs tasting menus around thoughtfully sourced ingredients, treating each dish as a chapter in a larger narrative. Praised internationally for its creativity and depth, the restaurant is celebrated for its progression of flavors, presentation, and exceptional produce.

The Host

Daniel Boey is one of Asia’s most respected fashion directors and curators, widely known as the “Godfather of Singaporean Fashion.” He has worked with global houses including Dior, Louis Vuitton, and Jean Paul Gaultier. Boey has received accolades such as ELLE Singapore’s Fashion Icon of the Year and is the founder of Singapore’s first virtual fashion festival, The Front Row.

The Experience

Through Boey’s lens, Haji Lane becomes a live case study in brand-building, trend cycles, and how cultural credibility translates into commercial relevance.

The Dinner

Burnt Ends is Singapore’s Michelin-starred temple of modern barbecue, led by Australian chef-owner Dave Pynt. Centered around a custom wood- and coal-fired oven, the restaurant delivers precise, fire-driven cooking. Consistently ranked among Asia’s 50 Best Restaurants, Burnt Ends pairs technical skill with bold flavor — from its cult-favorite pulled pork sanger to meticulously charred meats and vegetables.

STOP TWO
SEOUL

Euljiro Jungbu Market is a traditional wholesale-to-consumer market in central Seoul that has operated for decades as the heart of the city’s food industry. It sits within Euljiro, a district transforming from industrial workshops into one of Seoul’s most culturally influential neighborhoods. We have partnered with Michelin-starred chefs who source directly from Jungbu to accompany and host our group.

The Host

Joseph Lidgerwood is the Australian-born chef behind Seoul’s two-Michelin-starred restaurant Evett, recognized for redefining modern Korean fine dining. A recipient of the Michelin Blancpain Young Chef Award, he is known for his ingredient-driven approach focused exclusively on Korean produce, fermentation, and seasonality.

The Experience

Exploring his connections with artisans and vendors at Jungbu Market, Lidgerwood reveals how relationships translate into his refined, contemporary cuisine.

The Dinner

Evett is a Michelin-starred restaurant redefining modern Korean cuisine through seasonality and respect for local ingredients. Led by Lidgerwood, the restaurant pairs contemporary technique with rigorous market sourcing, building tasting menus around Korean fermentation traditions. Minimalist in design yet complex in flavor, Evett elevates Korean ingredients without ever distorting their identity.

The Host

Park Sungba is the Head Chef of Michelin-starred Onjium. His work extends beyond the plate into fermentation research and culinary scholarship, making him an authoritative voice on how Korea’s market ecosystems have sustained culinary tradition.

The Experience

Park Sungba leads a walk through Jungbu Market with a cultural-historical lens, exploring how traditional ingredients are sourced, valued, and preserved — and how market systems underpin both contemporary and heritage cooking.

The Dinner

Onjium is a Michelin-recognized restaurant devoted to the preservation and reinterpretation of traditional Korean royal court cuisine. The kitchen draws from archival research and centuries-old techniques, translating heritage recipes into meticulous contemporary plates. Set within a serene, hanok-inspired space, Onjium embodies the continuity between Seoul’s traditional markets and its most refined tables.
